Tarragon Chicken Salad Sandwich

Ingredients:
• 8 whole-grain bread slices, toasted
• 8 tomato slices
• 2 cups cooked chicken breast, shredded
• 4 lettuce leaves
• 1 cup mayonnaise
• 1/3 cup celery, chopped
• 1 cup plain Greek yogurt
• 3 tablespoons fresh tarragon, chopped
• 2 tablespoons fresh lemon juice
• ground pepper, to taste
Instructions:
1. Mix chicken, mayo, celery, Greek yogurt, tarragon, lemon juice and pepper in a bowl. Stir well to combine.
2. Place lettuce leaves on each bread slice, top with tomatoes and chicken mixture.
3. Place another bread slice on top and serve.
