Roasted Salmon with Kale Quinoa

Ingredients:
• 2 wild salmon fillets
• 3 cups kale, chopped
• 2 teaspoons olive oil
• 1 cup quinoa, cooked
• 2 tablespoons lemon juice
• 10 seedless red grapes, halved
• Salt, pepper, to taste
Instructions:
1.Preheat the oven to 425F. Prepare a baking sheet and line it with parchment paper.
2.Place the fillets on the sheet, rub with oil and season with salt and pepper.
3.Bake for 10 minutes. Mix kale, quinoa, grapes and lemon juice in a bowl. Let rest for 5 minutes.
4.Serve topped with salmon.
