Pumpkin Protein Pancakes

Ingredients:
• 4 eggs
• 1 cup plain Greek yogurt
• 1 cup canned pumpkin
• 3 tablespoons maple syrup
• 1 teaspoon vanilla extract
• 1 cup whole wheat flour
• 2 teaspoons baking powder
• 1 teaspoon pumpkin pie spice
• 1/2 cup pecans, chopped
• A pinch of salt
Instructions:
1. Beat eggs in a bowl, add yogurt, pumpkin, 1 tablespoon maple syrup, and vanilla.
2. In a separate bowl, mix flour, oats, baking powder, salt, and pumpkin pie spice. Mix flour mixture with egg mixture, stir well to combine.
3. Preheat a nonstick frying pan over medium heat and coat it with cooking spray.
4. Pour about 1/3 cup batter into the skillet and cook for about 3 minutes per side.
5. Serve topped with the remaining maple syrup and chopped pecans.
