Oatmeal Cookie Overnight Oats


Cooking time: 10 minutes

Ingredients:

• 1 cup unsweetened almond milk

• 2 carrots, peeled and grated

• 1 cup water

• 2/3 cup rolled oats

• 2 tablespoons raisins

• 2 teaspoons honey

• 1 teaspoon vanilla extract

• 3 tablespoons peanut butter

• 2/3 cup low fat cottage cheese

• A pinch of ground cinnamon

• A pinch of salt




Instructions:

1. Mix almond milk, water, carrots, raisins, oats, honey, vanilla, cinnamon and salt in a sauce pan. 2. Bring everything to a boil over medium heat. Reduce the heat to low and cook the oats for about 5- 7 minutes, stirring often. 3. Add peanut butter and stir well to combine. Serve topped with cinnamon and cottage cheese.
