Avocado Omelette

Ingredients:
• 1/2 cup cream cheese
• 1 tablespoon milk + 2 teaspoons
• 1/2 avocado, sliced
• 1/2 avocado, mashed
• 1 tablespoon oil
• 1/2 cup onions, chopped
• 1/2 cup green peppers, chopped
• 1 tomato, chopped
• 2 whole eggs
• 2 egg whites
• 1 tablespoon fresh parsley, chopped
Instructions:
1. Mix cream cheese and 1 tablespoon milk in a bowl.
2. In a separate bowl, mix mashed avocado and about 2 tablespoons cream cheese mixture, add the remaining milk, stir well to combine.
3. Preheat oil in a skillet over medium heat. Add onions and peppers and cook for about 2 minutes. Add tomatoes and sauté for 1 minute more. Remove from heat and set aside.
4. Mix eggs and egg whites in a bowl, add the remaining cream cheese mixture and stir well to combine.
5. Add the mixture to the skillet and cook for 3-4 minutes. Add onion mixture and avocado slices on top of the omelet.
6. Gently fold the omelet in half with a spatula, transfer to a plate. Serve topped with fresh parsley.
